Christmas Cookies

MANTECADO ICE CREAM:
Ingredients
Whole Milk  3,090 gr.
Heavy Cream 200 gr.
DPO SUPER 100 250 gr.
Sugar 450 gr.
Skimmed Powder Milk 50 gr.
Fructosoft 140 gr.
Mantecado Paste 200 gr.

 

Procedure:

  1. Pour the milk into a jug, then add the heavy cream and mantecado paste.
  2. In a separate container, measure out the DPO Super 100, sugar, Fructosoft, and skim milk powder, and mix them together.
  3. Combine the dry ingredients with the liquid mixture, blending well until everything is completely dissolved. Churn the mixture.
  4. Transfer the ice cream into a piping bag for filling the molds.

 

For assembly, prepare thematic cookies made with gingerbread dough.

 

Assembly

  1. Place the themed cookies in a blast chiller to temper them.
  2. Add the ice cream between two cookies, ensuring their shape and format are maintained.
  3. Assemble the cookie sandwich and return them to the blast freezer for 20 minutes.
